Ingredients

  • 100g plain flour

  • 2–3 eggs

  • 200–225ml milk

  • Pinch of salt

  • 2–4 tbsp vegetable oil or beef dripping

Directions

  • Make the Batter
    Mix flour and salt in a bowl
    Add eggs and a little milk
    Whisk until smooth
    Gradually add the rest of the milk
  • Rest the Batter (Important)
    Let the batter sit for at least 15–30 minutes
    This helps the puddings rise better
  • Heat the Oil
    Preheat oven to 220°C (200°C fan)
    Add oil to a muffin tray
    Heat the oven until very hot
  • Bake
    Carefully pour batter into hot oil
    Fill each section halfway
    Bake for 20–25 minutes
  • Serve
    Remove when golden and risen
    Serve immediately with roast dinner or gravy
