Ingredients
100g plain flour
2–3 eggs
200–225ml milk
Pinch of salt
2–4 tbsp vegetable oil or beef dripping
Directions
- Make the Batter
Mix flour and salt in a bowl
Add eggs and a little milk
Whisk until smooth

Let the batter sit for at least 15–30 minutes

Preheat oven to 220°C (200°C fan)
Add oil to a muffin tray
Heat the oven until very hot - Bake
Carefully pour batter into hot oil
Fill each section halfway
Bake for 20–25 minutes - Serve
Remove when golden and risen
Serve immediately with roast dinner or gravy
